Noticed a huge difference in my knife skills after 3 months of daily practice
I started timing myself on dicing onions back in February and I was taking like 4 minutes per onion. Now I'm down to about 1 minute and 15 seconds with way more consistent cuts. What really helped was recording myself and watching the footage to see where I was wasting motion. Anyone else do something specific that made a big jump in their prep speed?

Started filming myself too around the same time, and man, it really shows the dumb stuff you do without noticing. For me it was my grip on the knife. I was pinching way too far back on the blade and my fingers kept getting in the way of the rocking motion. Once I moved my pinch grip closer to the heel of the blade, everything smoothed out. Also learned the claw grip with my guide hand by watching a slow mo video of a chef on YouTube, my knuckles guide the blade now instead of my fingertips. That onion time drop from 4 minutes to under 90 seconds is huge, bet you feel like a ninja in the kitchen compared to before.

Pinch grip near the heel changed EVERYTHING for my speed too.
