Question about those new ceramic non-stick pans
I saw them everywhere online and thought it was just marketing hype, especially after my old Teflon pan lasted years. My kitchen supply rep gave me a sample of a GreenPan model to try for a month, and I have to say, the egg test changed my mind. It heats evenly and cleans up with a wipe, no sticking at all. Has anyone else put these through the paces on a real line during a busy Saturday night?

Ellis.susan doubting it survives a dinner rush is exactly what I wondered! I read a whole article from a chef who said the key is not using metal tools and keeping the heat at medium. He ran a breakfast place and swore by his ceramic pans for eggs, but he said they do wear out faster than the old school stuff if you blast them on high.
