Rant: dropped $240 on a "chef's knife skills" course and learned less than one shift with the prep cook
Signed up for a weekend knife skills class in Austin back in March because my cuts were slowing down the line. It cost $240 and six hours, and the whole thing was basically a guy showing us how to hold a knife for 20 minutes then handing out carrots. The prep cook at my last spot taught me more in one Saturday morning by just making me break down cases of onions until my wrist figured it out. Save the money and put in the reps with someone who will actually yell at your grip. What actually got your knife work faster, a class or just grinding through prep?
