Shoutout to the humble potato ricer for my gnocchi disaster
I tried making ricotta gnocchi with a ricer for the first time, and the dough turned into a sticky, unworkable paste instead of soft pillows. I learned the ricotta must be drained overnight, not just for an hour, to remove enough moisture. Has anyone else faced this, and what's your foolproof method for dry ricotta?

Sounds like you made ricotta soup instead.

Hey now, I'd call it a perfectly good sauce... just a bit loose.
