Shoutout to the humble potato ricer for my gnocchi disaster

I tried making ricotta gnocchi with a ricer for the first time, and the dough turned into a sticky, unworkable paste instead of soft pillows. I learned the ricotta must be drained overnight, not just for an hour, to remove enough moisture. Has anyone else faced this, and what's your foolproof method for dry ricotta?
