The $350 thermocouple probe I regretted until it paid for itself

Bought a high end wireless probe set last spring for $350, thought it was a total waste after my first two cooks read fine with the old instant read. Then I did a 12 hour pork butt overnight and the ambient temp alarm caught the smoker dropping 40 degrees at 3am while I was asleep. That single save during a catering order for 80 people at a wedding in Tulsa made the whole purchase worth it, no contest. Anyone else drop serious cash on gear that only proves itself once in a crisis?

My wallet still cries about that one, but my wedding vow is to that thermometer now.
