The one customer who asked me to boil his steak
I had a guy come in about six months ago at the dinner rush and order a ribeye well done. No big deal, I've cooked plenty of those. But then he leans over the pass and says 'can you boil it first, then sear it?' I thought he was joking but he was dead serious. He said his mom always did it that way and it made the meat 'more tender'. I just nodded, cooked it normal, and he actually came back the next week and asked for the same thing. Did I miss some old school cooking method or is this guy just wild?

And my buddy swears his grandma did that with pork chops so he gets it.

Nah pork chops aren't really tough enough to need brining.

Give me a break, it's a pork chop not some delicate science experiment. If you buy decent ones and don't cook them into shoe leather, they're fine without all that extra fuss. Brining feels like overkill for something that's already pretty forgiving.
