TIL a trick for keeping herbs fresh that changed my whole prep routine

I was at a pop-up dinner in Asheville last month, and the chef there showed me how he stores parsley and cilantro. He puts the stems in a glass of water, like flowers, and covers the leaves with a plastic bag in the fridge. I always just wrapped them in a damp towel before. I tried it and my herbs lasted a full week without wilting. Has anyone else found a better way to handle soft herbs for service?

Seen this with green onions too. It's all about treating fresh stuff like it's still alive. We forget food isn't just a product.
