Always thought the 'bloom' step for pour over was just for show until my coffee tasted sour for a week straight.

Been there... a sour brew usually means the grounds aren't getting wet enough at the start. Try pouring just enough hot water to soak all the dry coffee and let it sit for 30 seconds before you add the rest. That bloom lets the gas escape so the water can actually touch the grounds and pull out the good stuff. Skipping it is like trying to brew with little foam pillows.

Another angle is water hardness. Minerals in your tap water can really mess with extraction, making it taste sour even with a good bloom. A simple filter jug might fix it if your local water is too hard.
