Cold brew finally clicked for me after reading one comment about extraction time

I've been making cold brew for like 4 years and always thought the 12-16 hour steep was just the standard. Last week I saw someone on a home barista forum say they only steep for 6-8 hours and their batches taste way less bitter. I figured they were nuts but tried it with the same beans and ratio. Night and day difference, smoother and still strong enough to drink straight over ice. Turns out I was over extracting this whole time. Anyone else cut their cold brew time way down and notice a big change?

Trimmed mine to 7 hours after the same kind of comment and it was a total game changer. I used to get this dull, kinda chalky taste no matter what beans I bought, and now it’s way cleaner. The funny part is I thought longer steep meant stronger, but it really just pulls out the harsh stuff. I also dropped my ratio a bit, like 1:10 instead of 1:8, and it balances better without needing cream or sugar. If you go shorter, just shake the jar once at the halfway point, seemed to help even extraction. Your mileage may vary with darker roasts, but for medium it’s been solid every time.
