Found a tiny roaster in Portland that nails the light roast curve
I stopped into this place called Nook Coffee on SE Division last Saturday, just because the line was short. The owner roasted a Kenya AA batch that had this honeyed brightness, and he was pulling shots at 19.5 seconds, way out of the standard zone. He said he tunes extraction to the bean's sugar content, not the clock, and I swear the cup tasted cleaner than anything I've had at the big shops. It got me thinking about how much we lean on recipes instead of listening to what's happening. Has anyone else found a spot that throws the rulebook away but still nails it every time?
