Pour over taste flat since I swapped grinders

Switched from a blade grinder to a burr model back in March, dialed in 18 grams to 300 ml like every guide says. Same beans from the local roaster, same water temp, yet my cups lost that bright berry note completely. Anyone else find burr grinders make things too uniform, or am I missing a setting somewhere?

What if the berry note you're chasing was never really in the beans, just in the uneven chaos of that blade grinder? Burr grinders give you even particles, so you're actually tasting the coffee for what it is, not what the grinder's randomness was adding. That bright, fruity hit you liked? It might have been fines and boulders mixing together to fake a flavor that wasn't there. You could try going coarser or changing your water ratio, but honestly, you might just be missing the old grind's flaws. The burr is showing you the truth, and sometimes the truth is flat.
