Stop pretending dark roasts are the only real coffee
Been going to this shop in Portland called Coava for 5 years now and I keep hearing people say they only drink dark roast because light roast is 'too sour'. That's just bad roasting or bad brewing. A properly developed light roast from a place like Onyx in Arkansas tastes sweet and complex not sour. Why do people think bitterness equals strength?

Drop your water temp to 195-200 and grind a bit finer. That kills the sour notes without turning it into charcoal.

Wait you're telling me @carr.lee that going down to 195 actually works and not just scorch the beans? I've been scared to drop below 200 because I thought it'd just make everything taste like dirt.
