The espresso puck prep debate, 3 years of doing it wrong
I spent forever chasing sour shots, upgrading grinders and machines. Then I timed my actual prep against a friend in Portland, and my leveling tool was adding 40 seconds per shot. Are the fancy distribution tools actually worth it, or is a good WDT and a steady hand just as fast and consistent?

The 40 seconds thing is the real hidden tax nobody talks about. People obsess over grind retention and water temp but ignore that your workflow time actually changes your shot temperature if you're not heating the group head properly. I timed myself with just a WDT and tapping the portafilter once, and honestly the consistency gap between that and my old $80 leveler was basically nothing once I stopped being obsessive. Also, those fancy tools don't fix bad puck prep habits, they just make you do the bad habit slower with more confidence. If you're pulling sour shots still, check your water temp drop from that long prep window before buying another gadget.
