Tried a cold brew concentrate from a local roaster and it was a total mess

I picked up a bottle of 'Dark Sky' cold brew concentrate from that new place on 5th Street, thinking it would be a quick fix for my morning. Followed the 1:3 ratio they suggested, but the result was so acidic it made my teeth feel weird. I guess not all concentrates are created equal, and my cheap home setup just can't handle some of them. Anyone have a go-to brand or method that doesn't turn into a science experiment?

The water quality in my building is awful and makes any concentrate taste metallic. I use a Brita filter now and it fixed like 80% of my weird coffee problems.

Ever see a friend try to make cold brew with a fancy concentrate? My buddy Mark did that last week... it turned out so bitter he just poured it down the sink.

Yeah, that acidic bite is the worst (feels like your enamel is just giving up). Honestly, skipping the concentrate and just making a big batch yourself is way more reliable. Get a cheap mason jar, dump in a cup of coarse ground coffee, add four cups of cold water, and let it sit on the counter for like 18 hours. Strain it through a regular coffee filter and you're done. The stuff you make at home never has that weird chemical taste some concentrates get.
