Figured out after 3 years I was brewing my pour over with water way too hot

Was at a shop in Portland last month, watched the barista make a pour over. She pulled her kettle off the burner and let it sit a good 45 seconds before pouring. I always just boiled and poured right away. She said anything above 205 F burns the beans. Tried it at home the next day with my usual beans. Night and day difference. No more bitter taste. Anyone else make this mistake?

Exactly what happened to me, grabbed a cheap thermometer and it fixed everything (honestly a lifesaver).

I picked up a $8 one from Target after my old one gave me crazy readings. @hannahsingh that cheap thermometer really was a lifesaver for me too. I didn't even bother calibrating it right away, just tested it in boiling water and it was within a degree so I rolled with it. Worked perfect for brisket and ribs, totally changed how I cook now.

The first cheap one I grabbed was 10 bucks at Walmart, the probe was super thin so it actually worked way better than my old fancy one. Did you check the calibration right out of the box or just trust it and go? Some of those cheap ones are way off from the factory.
