Started timing my pour at the cafe on 9th and my coffee stopped tasting burnt
I go to this small cafe on 9th street most mornings before work and always got the same medium roast. It tasted burnt and bitter for months and I just thought that was how dark roast was supposed to be. Last Tuesday the owner watched me dump in cream and sugar right away and asked if I wanted to try it black first. He said wait 4 minutes after they hand it to you before you drink it. I tried it and the bitter taste was mostly gone. I asked him why and he said the water is still around 200 degrees when it hits the cup and keeps cooking the grounds. Now I just let it sit on the table while I check emails. Has anyone else noticed a big taste difference just from waiting a few minutes?
