Unpopular opinion: most people order their pour-overs wrong at specialty shops
I was at a shop in Seattle last Saturday and watched 5 people in a row ask for extra room in their pour-over so they could add cream. That totally defeats the whole point of a carefully brewed single origin! The barista even told one guy the beans were from a specific Ethiopian coop and took 4 minutes to brew. Has anyone else noticed people doing this and does it bug you as much as me?

@milesbailey is right, that does sound like performance art, except nobody was in on the joke. Watching people ask for room in a pour-over is like watching someone add ketchup to a perfectly cooked steak. It makes me wonder why they didn't just order a regular drip coffee with cream and save everyone the trouble.

@milesbailey you’d think after the third one they’d just start pouring a little less water. I waited tables for a few years and learned to ask "do you want room for cream or sugar?" before touching a pour-over. Saved a lot of headaches and people stopped treating me like I was ruining their art project.
