Warning: The latte art trend at my local shop is hiding something

I was at Brew & Bean in Austin last Tuesday and noticed the barista's foam was way too perfect, so I asked about their training. Turns out they've been using a cheap stabilizer additive, not real milk technique, and it gives a weird chemical aftertaste that I couldn't place at first. Has anyone else caught a shop cutting corners like this and said something, or am I overreacting?

Oh wow, that's wild! I never even thought about the chemical side of it, but what really bugs me is how this messes with people who have allergies or sensitivities. Like, my sister can't have certain preservatives and if a shop is secretly adding stabilizers without saying anything, that could actually make someone sick. Shops should have to list out their ingredients honestly, even in the coffee foam. It's not just about taste, it's about safety too.

...and yeah that tracks completely because I had almost the same thing happen at a different shop here in Portland called Mugs & More. Their foam was so stiff and shiny it looked fake, like plastic almost. I asked if they used a special milk and the barista got all defensive and said it was a "proprietary blend" which is just code for chemicals honestly. I took one sip and my tongue felt coated in that weird waxy aftertaste you're talking about. Its like the difference between real whipped cream and that canned stuff that leaves a film in your mouth. Theyre definitely cutting corners and hoping nobody notices but we notice.

My buddy told me he went to a place in Austin that was doing the same thing, swore the foam had the texture of shaving cream and he couldn't finish his drink.
