Why does nobody talk about the weird USB-C dock power handshake issues?
Spent a whole Tuesday at the shop trying to get a client's laptop to output video through a new dock, only to fix it by swapping the power adapter for the original one. Has anyone else run into this specific power delivery problem?

It gets talked about a ton in my circles. The power delivery spec is a mess of different standards. Your fix makes total sense, because the dock and laptop were probably arguing over who was in charge of supplying power. A lot of third-party chargers don't send the exact right signal, so the handshake fails and takes the video output down with it. It's less about the dock being bad and more about the power adapter not playing by the unofficial rules.

Ugh, tell me about it. I had the same fight with my work laptop and a cheap USB-C hub. The screen kept blinking out until I swapped the generic power brick for the laptop's official charger. Suddenly everything worked perfectly. It's wild how the whole video signal depends on that little power conversation going just right.
