An old finisher in Fresno told me to stop working the bleed water back in, and it fixed my scaling problem
I was about to start my finish on a 40x60 slab last month when he walked by and asked why I was steel troweling so early. Now I wait for that sheen to disappear completely before I touch it, has anyone else had a job where the sun and wind made that call way harder than it should be?

Had a pour out off Shields two summers back where the wind was hitting 20 mph and that sheen was gone in maybe ten minutes flat, so I got skunked either way and ended up with a rough patch near the edge. Your guy in Fresno isn't wrong, but some days the weather just won't give you the window.
