A bride in Chicago insisted on a tight updo that went against everything I learned about face shape.
She looked me right in the eye at her trial and said, 'I don't care if it makes my face look round, I want to feel like a princess,' which made me realize sometimes the technical rules matter less than the client's vision, so how do you handle a situation where a client's request clashes with your training?

Their vision always wins.

But what happens when their vision is wrong? Like @riley43 said, that's how you get a bad final product. How do you stop one person's idea from hurting the whole project?

Yeah, "their vision wins" is the whole problem. It just shuts down any other good ideas. That's how you end up with bad stuff nobody wanted.
