A barista in Portland told me to grind coarser for my moka pot and it fixed 2 years of bitter brews
She watched me pack the basket tight at the counter and just said 'you're choking it, go coarse like sea salt.' Now I do that every morning and the harsh edge is gone, so what other small tweaks did I miss?
Kept telling my buddy to stop tamping his moka pot like he was mad at it, but he wouldn't listen. He was pressing the grounds down hard and wondering why every cup came out like burnt rubber. Then his roommate from Italy watched him do it one morning and just laughed. Apparently you're supposed to leave the grounds loose and level, just tap the basket a bit, nothing more. He switched and now he won't shut up about how smooth it tastes. Sometimes the fix is just doing less.
