Just realized the old barista at that shop in Portland was right about my water temp
He told me to let my kettle sit 30 seconds off boil before pouring over my V60 last year and after finally trying it this morning the difference in how clean my Ethiopian beans taste is honestly making me mad I ignored him for so long, has anyone else had a random tip from a stranger completely change their brew?

Oh man, that thirty second wait is such a game changer. I had a similar thing with my Aeropress where some dude at a farmers market told me to grind finer than I thought I should and use a longer steep time, and it totally opened up the sweetness in my beans. It's wild how those little tweaks can make or break a cup, and you just assume you know better until you actually try it.

Did the farmers market guy actually tell you to go finer, or did you just keep grinding down until it tasted right? I find advice like that always needs a grain of salt since every bean and grinder is different. Took me a solid month of messing around with my V60 before I got something drinkable after someone told me to do a 4:6 pour. Turned out their water was way harder than mine so the extraction was completely different.
