My instant read thermometer revealed my water temp was off by 12 degrees this whole time

I've been brewing pour over for about 2 years and always guessed my water was around 200 degrees. Last week I borrowed a cheap digital thermometer from my neighbor and checked right before pouring. Turns out I was sitting at 188, which explains why my Ethiopian beans always tasted a bit flat and sour. I adjusted the wait time after boil and the same bag of coffee suddenly had all those blueberry notes the roaster promised. Has anyone else checked their actual brew temp and been surprised by the real number?
