Serious question, the little cafe in Bisbee near the copper pit does a 12 hour cold brew and now my kitchen batch tastes weak
I was in Bisbee last month for a friend's birthday and stopped at this tiny spot right by the old copper pit, mostly just to get out of the sun. They had a cold brew on the menu that they said steeps for 12 hours, and the first sip honestly surprised me, it was dark and sweet without any of that bitter edge I usually get. I asked the guy behind the counter what ratio they use and he said 1 to 8 by weight, coarse grind, and they let it sit in the walk in overnight. I tried the same thing at home on Sunday with my usual 1 to 15 and it came out thin and kind of flat, like I was drinking cold water with a hint of coffee. So now I'm thinking I've been way too stingy with the grounds this whole time, or maybe my grind is off, or both. I don't have a fancy scale beyond my kitchen one, and I'm not sure if the water temp matters when it's all going in the fridge anyway. Has anyone messed with the ratio like that and found a sweet spot, and does a colder steep actually pull out more sweetness or am I reading too much into one good cup?
