Struggled 9 months with bitter cold brew, ice bath was the fix
Honestly I kept getting this harsh, almost burnt taste from my cold brew no matter what beans I tried. I switched grind sizes, ratios, even filtered water, nothing worked for like 9 months straight. Then last week I read a random comment about dropping the finished brew into an ice bath for 10 minutes before straining. Tried it with my usual batch and the difference was huge, way smoother and sweeter. Has anyone else had a weird simple step that took them forever to stumble on?

That "harsh, almost burnt taste" is exactly what I dealt with for ages, and it turned out my problem was the temperature swing too. I started putting my jar in a cooler with ice for the last bit of the brew time and it smoothed things out more than any bean change ever did. It's funny how the simplest tweak can fix something you've been fighting for months.
