Bought a $7 bag of lentils on a whim at the farmers market last Saturday, and now I'm ditching canned beans for good after the lady running the stall showed me how they soak up way more flavor in soups.
Has anyone else made the switch and found a favorite lentil recipe that doesn't take forever to cook?

adamk95's curry sounds fine but red lentils get mushy too fast, I prefer green or brown for texture.

lmao yeah I did the same thing after I got a bag of red lentils from a co-op and now I'm hooked. My go to is a lazy coconut curry thing where I just dump a can of coconut milk, some curry paste, and a handful of lentils into a pot and let it simmer while I watch YouTube. It's done in like 20 minutes and tastes way better than anything from a can. I also tried making lentil soup with leftover taco meat once and it was weirdly good, like a spicy bean soup but heartier.

Hold up, leftover taco meat in lentil soup? That's actually genius and I'm kind of mad I never thought of it lol. I've been eating lentils for years and that whole combo sounds like something I'd make at 11pm after forgetting to thaw chicken. I gotta try that coconut curry thing too, I always do mine with just broth and it gets boring. Honestly your lazy curry sounds way better than my sad lentil soup routine, I need to step up my game. The taco meat idea is wild but I bet the cumin and chili powder from the seasoning just makes everything taste bolder.
