Can we talk about swapping heavy cream for coconut milk in soups?
I was making a broccoli cheddar soup last night and realized I was out of heavy cream. Found a blog post from a home cook that said full fat coconut milk works as a 1:1 swap in creamy soups. I was skeptical but it actually worked, the soup was still thick and rich. Now I'm wondering what other dairy swaps people have found that actually hold up. Has anyone tried this with other soups?

Yeah I was skeptical too until I tried it. Now I actually prefer coconut milk in creamy soups, it adds a little something without overpowering the other flavors.
