My neighbor in Tulsa told me my biscuits were dry rocks, so I switched to cold frozen butter
I brought a batch of biscuits to a potluck on my block about two months ago, feeling pretty good about them, and my neighbor Deb took one bite and just said, these are dry, hon. Not mean, just honest. I had been using room temp butter and cutting it in with a fork like my mom taught me, and the results were always a little sad. So I tried freezing the butter and grating it on a box grater straight into the flour, then tossing it with my fingers just until it looked like coarse crumbs. I also started folding the dough maybe 3 times instead of kneading it, because Deb told me I was working it way too much. That first new batch came out tall and flaky, and my husband ate 4 before dinner even started. Now I keep a stick of butter in the freezer at all times just for this. Anyone else got a swap for buttermilk in biscuits? I never have it on hand and I'm tired of the vinegar trick.
