My roux broke 10 minutes before guests rang the bell, and a jar of cold water fixed it
I was making gumbo for six people last Saturday and my roux seized up into this greasy, clumpy mess right around the 25 minute mark. I panicked and almost dumped the whole thing in the trash, but my neighbor said to pull it off the heat and whisk in a splash of cold water one spoon at a time. Took about 4 spoonfuls and maybe 2 minutes of hard whisking, and it smoothed right back out into the dark brown paste I wanted. I finished the gumbo and nobody at the table could tell anything went wrong. The trick is you have to take it off the burner first or the flour just keeps clumping, which I did not know. Has anyone else had a roux go sideways like this, and does the cold water fix work for a lighter blonde roux too?
