I hosted at my place in Fort Worth this year and handed her the half cup measure with the applesauce right next to the butter dish, and she flat out refused to try it. She said her grandma's cornbread has used a full stick since 1962 and that swapping anything was "disrespecting the recipe." I made two pans anyway, one with 1/4 cup applesauce in place of half the butter, and every single person at that table went back for the swapped pan first. She said it was a fluke and that the second batch just came out better. Fine, whatever, but now my mother keeps telling people I "tried to trick" dinner, which is a fun thing to hear about yourself. How do you get a relative to just try one bite without it turning into a whole thing?
