PSA: My soup was boring so I dumped in the pickle juice from the empty jar and now I'm mad I never did it sooner
I had a pot of potato soup going on a Tuesday that tasted like nothing, just warm mush water. I stared at the almost empty pickle jar in my fridge, shrugged, and poured the last couple tablespoons of brine right into the pot. It perked the whole thing up in a way that made no sense, salty and a little sour and weirdly perfect with the potatoes. Now I keep a jar of brine in the door just for soup and chili, it costs zero dollars and saves a bland dinner. What random jar liquid do you all rescue your food with?
My grandma used to do the pickle juice thing with her bean soup and I always thought she was just being cheap. Tried it myself last winter when I had maybe a quarter cup of brine left and the soup was flat. Changed the whole pot, no joke. Now I do the same with the juice from a jar of banana peppers, that stuff goes in chili and even into the water when I'm boiling rice. Also olive brine if you're doing a white bean thing. Two tablespoons is plenty, you don't want it tasting like a salad.
