That lightbulb moment about salt shakers at a diner booth

Ngl I sat there watching this old waitress fill 12 shakers with rice first then salt and realized I've been doing it backwards for 10 years, the rice keeps the salt from clumping way better on top. Anyone else been doing this wrong their whole life?

@faithcampbell you bring up a good point about the rice shifting. Reminds me of this diner I used to go to in Ohio where the waitress would tap the shaker three times before handing it over. She said it was a superstition her grandma taught her. Never did figure out if it was about the salt or the rice but she always had the smoothest pour. I guess the old school diner ladies have their own system that just works without overthinking it.

That part about the rice keeping the salt from clumping better on top is interesting, but doesn't the rice just shift to the bottom after a few days? Seems like you'd have to keep shaking it up or waiters would end up dumping salt clumps with rice at the bottom anyway. Did she say how often they rotate the salt or clean the shakers?

Read somewhere that salt absorbs moisture better when rice is on top actually.
