My grandma's recipe card box showed me how much I've changed
Found a shoebox of her handwritten cards when cleaning out the closet last Sunday. She wrote 'add a pinch of salt' on everything, even the cookie recipe. I used to think that was lazy advice, but after 12 years of baking sourdough and testing hydration levels, I finally get it. Its not about the exact amount, its about learning to feel when something needs adjusting. Her cards are all stained and dogeared from use, mines are mostly notes on my phone now. Does anyone else have an older relatives method that only made sense after you did the hobby for a long time?
Doesn't the "pinch of salt" thing actually mean something different though? My mom always said a pinch was about a quarter teaspoon, so it was a real amount, just measured with your fingers instead of a spoon. She had small hands and her pinch was different from my dad's, which is why her bread always came out better than his. So I don't know that it was advice about feeling your way through a recipe, it might have just been how people wrote down small amounts back then. Not trying to nitpick your grandma, but the card probably meant more than a lesson in instinct.
