Debate: Should dumpling wrappers be store-bought or homemade?
I used to swear by store-bought wrappers for years... they were easy and quick. But last month, I tried making my own for a potluck at my friend's place in Portland, and the texture was totally different. The homemade ones stayed chewy even after steaming, while store-bought always got a bit soggy on me. On the other hand, rolling them out took me nearly 2 hours for 40 dumplings, and they weren't even round. So which side do you fall on? Is the extra time for homemade worth it, or are you team store-bought all the way?

Ha! My friend swore by homemade until she had dumpling dough stuck to her ceiling.

Hah! Classic. You gotta go in with confidence or don't go at all. Nothing worse than a limp wrist flick that sends a dumpling on a scenic tour. My rule is commit to the fold or expect a ceiling decoration. Dough trauma is real.
