I think folding the dumpling wrapper pleats is overrated - it's the seal that matters
I keep seeing people on here obsessing over how many pleats they can cram into a dumpling. But last weekend I made 60 dumplings for a family dinner and the ones with just a simple crimp held together perfectly while my buddy's fancy 12-pleat ones burst open in the pot. I've been running a painting crew for 15 years and I've learned that prep work matters way more than fancy finishing. So why do we treat dumplings like a beauty contest instead of focusing on getting that edge sealed tight? Has anyone else had a batch fall apart because you were too busy trying to impress with pleats?

That's kind of the fun of it though, breaking down something simple into its parts and figuring out how to make it perfect. Good cooking is just applied science at the end of the day, finding the right ratios and techniques for the texture you want. Maybe that's why dumplings are so satisfying, they're like a little engineering puzzle you get to eat.

Made about 200 potstickers for a work potluck last month and I switched to a simple pinch seal halfway through. Not a single one leaked compared to the first batch where I was showing off.
