I used to boil my dumplings until a street vendor in Flushing yelled at me
I grew up thinking dumplings had to be boiled, like pasta or something. I was at a little cart in Flushing, Queens last fall and the lady running it saw me order boiled ones. She waved her spatula at me and said "You're making them sad! Pan fry them or steam them, never boil unless they're frozen." I felt stupid but I tried her pan-fried pork and chive dumplings and they had this crispy bottom that changed everything. Now I only boil if the bag says frozen and I'm in a rush - anyone else have a cooking method they stuck with for way too long?

... I've been boiling eggs the same way my whole life until my uncle caught me dropping them into boiling water and called it a "war crime" against breakfast... Turns out starting them in cold water keeps the yolks from turning that weird grey color. It's funny how we just keep doing things wrong for years because nobody ever told us different...

Oh come on, I have to push back on this one, @wendy628. I actually think dropping eggs into boiling water is the right way to do it. My grandma taught me that and she would never steer me wrong. Starting them cold means they sit in the water longer and can get overcooked on the outside before the inside even starts. And that grey ring? I always thought that was from cooking them too long or not shocking them in ice water after. Seriously, try putting them in boiling water for exactly 12 minutes then straight into an ice bath. Perfect yellow yolks every time, no grey in sight. I guess we both have uncles with strong opinions about eggs but mine would probably call the cold start method a war crime too.

Respectfully, I gotta disagree here. The cold start method works because the eggs heat up slowly and evenly, so the yolks don't get shocked into that sulfur reaction that causes the grey ring. Ive done both ways side by side and the cold start eggs peeled way cleaner too, less sticking to the shell. Your grandma might have been onto something for sure, but the science actually backs up starting cold if you want that perfect yellow center.
