My go-to dipping sauce turned out horrible after I switched soy sauce brands
Picked up a different brand of soy sauce last week at the Asian market because my usual one was out. Mixed up my usual garlic, ginger, vinegar, and chili oil recipe for some pork dumplings I made Saturday. Sauce came out way too salty and bitter. Took me a minute to realize the new soy sauce had way more sodium and a darker flavor. Ended up dumping the batch and starting over with my old brand from a different store. Anyone else had a sauce recipe get wrecked by swapping one ingredient?

Dilute the bitter stuff with a splash of water and extra vinegar next time.

Actually tried that EXACT thing last week with a batch of dandelion greens I boiled too long. The water splash helped cut the harshness but the extra vinegar made it WORSE honestly - had this weird sour-bitter clash. Next time I'm just going to blanch them first then saute with garlic and a pinch of sugar instead. The sugar trick is weird but it really balances out the bitter without making things taste sweet.

Nah, keep the extra vinegar, that sour kick wakes up the greens way better than sugar which just masks the flavor. Blanching first then sauteing with garlic is fine but adding sugar feels like you're cooking for a toddler who can't handle real taste.
