Nearly ruined a batch of 60 potstickers because the wrappers got too dry while I was folding
I was making a big batch at my sister's house in Portland last Saturday, and the wrappers started cracking and tearing after sitting out uncovered for just 20 minutes. I had to rehydrate them one by one with a damp cloth, and now I always cover the stack with plastic wrap immediately. Has anyone else had wrappers dry out faster in certain weather conditions?

Honestly I used to think it was fine to leave them uncovered while I worked, thought I was being efficient. But last time I made wontons the batch was like 50 and by the time I got to the last ones they were cracking all over the place. I was so annoyed I almost threw them out. Now I cover the pile with a damp paper towel and a plate on top every single time.

Used to be the same way, just left them out on the counter. Never again though. Now I cover mine with a damp towel too and it makes a huge difference.
