Why I stopped freezing my dumplings before cooking them

A Chinese grandma at the market told me fresh dumplings taste completely different from frozen ones after I bought her frozen batch, so I tried making them fresh one Sunday and she was right about the texture change.

Grandma wasn't wrong. Fresh dough has a snap you just can't freeze back in.

Tbh, my "fresh dough" game is so weak I'd probably buy the frozen stuff and call it a win anyway. Honestly, the snap I hear is usually my own back cracking when I lean over the mixing bowl. Ngl, grandma would have disowned me for sure.
