My friend's grandma always did this with her meat sauce. She called it her secret trick to cut the acid from the tomatoes. We all thought it was weird until she forgot it once, and the whole pot tasted totally different, way sharper. How much sugar did your uncle tell you to use?

My uncle said a teaspoon per big can of tomatoes usually does it. You gotta stir it in and let it cook for a few minutes, then taste it. Sometimes I only need half that if the tomatoes aren't super sharp.

Yeah that's the move. I'll do a pinch at a time until the edge comes off. Too much and it just tastes sweet.
