Grandma's pound cake recipe vs modern box cake mix - which one actually wins?

I spent last Sunday making my grandmother's pound cake recipe from scratch, using real butter and cream. It took about 90 minutes total, and the cake was dense but rich. Then on Tuesday I used a box mix from the store, and it was done in 35 minutes. The box cake was fluffier and my kids ate it faster. Here's the debate: do we sacrifice flavor and tradition for convenience and speed? My grandmother would say the quality matters more, but I'm not sure my family notices the difference. Has anyone else done a side by side test like this with an old family recipe versus a modern shortcut?

Saw a food science video where they tested this and the box mix has more chemical leaveners and emulsifiers that basically cheat the texture. Grandma's pound cake is almost like a different food category.

see I gotta disagree a little bit here. box mix is doing something totally different from scratch but I don't think it's cheating so much as just being its own thing. like yeah grandma's pound cake is denser and more butter forward but sometimes I actually want that lighter almost fluffy crumb you get from a box. it's not worse just different, like comparing a biscuit to a roll. and honestly those chemical leaveners are just tools, same as baking soda and cream of tartar are in homemade recipes. I've made both side by side and they each have their place depending on what kind of cake I'm craving.

Oh boy, here we go again with the "which is better" food fight. Honestly, at this point Grandma's pound cake and a box mix are like comparing a steak dinner to a fast food burger. Yeah, one's fancier and takes more effort, but sometimes you just want the burger in 5 minutes flat. Your kids not noticing the difference is the real punchline here. Spend 90 minutes on a labor of love and they'll still pick the chemical fluff every time. I've done this exact test at home and the scratch cake sat on the counter for three days while the box mix was gone in an afternoon. So really the winner is whichever one gets eaten, not whichever one your grandma would approve of.
