My grandma's meatloaf recipe always gets ruined when people skip the milk soak
She soaked the breadcrumbs in a full cup of milk for 20 minutes, which kept it from getting dry. Anyone have other old school tricks like that?

My great aunt swore by putting a pan of water on the lower oven rack when baking cakes. She said the steam kept them from cracking on top. I tried it with a pound cake last year and it actually worked, the top stayed perfectly flat. It’s one of those little things you’d never think of on your own.

Remember my mom putting a strip of raw bacon on top of her meatloaf before baking. Honestly, it bastes the whole thing as it cooks and adds so much flavor. Tbh I still do it every time now.

Honestly, I skip the milk soak on purpose. I find it makes the meatloaf texture way too wet and mushy. A couple of beaten eggs and some ketchup mixed right in gives plenty of moisture without that soggy bread feel. My version never comes out dry. Guess it just shows how different old tricks can be.
