My grandma's meatloaf recipe fell apart last Sunday when I tried to bake it for the first time

I forgot she always used a specific blend of breadcrumbs and milk, so my loaf turned into a greasy mess in the pan. Has anyone else had a family recipe fail because you missed one tiny ingredient?

Add a splash of milk to the breadcrumbs and let them soak for a few minutes before mixing into the meat. That little step makes everything hold together way better and keeps the grease from pooling. Your grandma probably did that without even thinking about it, and it makes all the difference.

@torres.grant is totally right about that milk trick, but here's something nobody mentions - you gotta let that milk soak into the breadcrumbs until they're basically a paste, not just damp. I see people rush this step all the time and end up with dry crumbs floating around the meat. The extra minute or two of soaking changes the whole texture and stops the meat from getting that weird crumbly thing. Plus it helps the seasoning stick better too since the breadcrumbs actually absorb the flavor instead of just sitting on top.
