My mom's gravy was always a disaster until I watched her make it...
She swore by using flour straight from the bag, but after 40 years of lumps I finally convinced her to toast it in a dry pan first... the texture change was night and day. Has anyone else seen a huge difference from one little prep step like that?

Has anyone else had a cooking habit that just took forever to change? I remember my mom always insisted on adding garlic to everything raw, and it took us years to realize roasting it first made the whole dish better. Little steps like that really do make a huge difference.

That bit about the garlic raw vs roasted really hit home. My mom was the same way with onions, she'd just chop them and throw them in anything raw, and I thought that was normal for way too long. Once I started sweating them down in butter first, it was like a whole new world opened up in my kitchen. It's funny how these little changes feel like you're breaking some unwritten family rule at first.
