My grandmother used to say the wait makes the crunch perfect. I think of her every time I open a jar.

Seriously, waiting is the hardest part but it's so worth it. I tried a quick pickle recipe once and it was just vinegary mush, no crunch at all. Now I just follow the old timers and let time do its thing.

That saying about the wait making the crunch perfect is so true. @emery_park93, I get that a month feels like forever, but it really does change the texture. My own attempt to speed things up once just gave me soggy cucumbers. Now I just set a calendar reminder and try to forget about them. The day you finally open that jar is always a good one.
