That week of bad scallops changed my mind about seafood
I always swore I hated seafood until my aunt made her scallop casserole last Christmas and I tried one just to be polite. Turns out it was just the cheap frozen stuff I'd been eating before, now I ask for that recipe every year. Anyone else have a food you thought you hated until you had it made right?

Oh man, same thing happened to me with okra! I grew up thinking it was this slimy, gross vegetable because my mom would just boil it. Then I went to a restaurant in the South and had it fried with some kind of spicy ranch dip and I couldn't believe how good it was. Now I make it at home all the time, just toss it in cornmeal and fry it up. It's crazy how much preparation matters, especially with seafood and veggies. Your scallop story makes me want to give frozen seafood another chance though, maybe I just need to find the right brand or recipe.

Hold on though... frozen okra is actually pretty good if you get it from the right place, not the same as fresh but still works fine for frying. Just gotta thaw it out and pat it real dry before you toss it in the cornmeal or you'll end up with a soggy mess. That spicy ranch dip sounds amazing though, might have to try that combo next time.

I gotta push back a little on the frozen seafood thing. Even the best frozen scallops have that weird rubbery texture no matter what you do, I've tried a dozen different brands and methods. Fresh scallops from a real fish market are night and day different, they literally melt in your mouth instead of bouncing off your teeth. The slimy okra problem is more about how you cook it though, frying fixes everything.
