The cheap pan that taught me about preheating
I cooked eggs in a scratched nonstick skillet for 5 years and just accepted they'd stick every time. Last month at a thrift store, an old guy saw me grab another cheap pan and said "you know you gotta let it heat up slow first, right?" Has anyone else had some simple cooking trick that took them way too long to figure out?

@tara793 nailed it with that water test trick. I did the exact same thing for years with my nonstick pans. What really clicked for me was waiting until the pan was fully hot before adding oil too. I used to dump oil in a cold pan and wonder why it would burn or smoke. Now I let the pan heat up for a few minutes on medium, then add butter or oil, and the eggs slide right off with zero sticking. It's wild how such a small change makes everything better.

You know you gotta let it heat up slow first" - man, that's a good one. I went years thinking nonstick was just a scam because everything stuck. Turns out I was blasting it on high like a maniac. The real trick I learned way too late is that your pan needs to be fully up to temperature before anything hits it. Like, if you flick water on it and it sizzles and dances, you're good. But if it just sits there or evaporates instantly, you're not ready yet. That changed my whole cooking game, not just for eggs but for everything.

Right? For real, the sizzling water test is the only reason I don't curse at my pans anymore. I used to get so frustrated because I'd end up with scrambled eggs that looked like a science experiment gone wrong. It's crazy how just waiting an extra minute makes you feel like you actually know what you're doing in the kitchen. And now I don't even bother with expensive nonstick pans, a cheap one works perfect as long as you treat it right.
