Wait, seriously? That's a huge jump. I always thought hourly was safer because you get paid for all your time. How did you even figure out what to charge per project without getting ripped off?

Getting ripped off" was my big worry too. I started by tracking how long past hourly projects actually took me, then added a buffer for revisions. You basically have to guess at first and accept that some early quotes will be wrong.
