Pro tip: My old jar of dried rosemary saved dinner tonight.
I was roasting potatoes and used dried rosemary since my fresh plant died, and it still made the kitchen smell amazing. People say dried herbs lose flavor, but this little win made me smile and saved my meal. What's a time using something simple from your cupboard turned out better than planned?

Your story about the old jar of dried rosemary saving dinner reminds me of my almost empty tin of dried sage. I was making a simple stuffing mix from stale bread and pantry odds and ends last Thanksgiving. That sage had been sitting for years, but it gave the whole dish a rich, savory depth that surprised everyone. It turned a basic side into the highlight of the meal. Those forgotten cupboard items really can pull through in a pinch.

Found a half-empty jar of oregano from my last move that somehow made a bland pasta sauce amazing. @stellaw91, ever have a spice surprise you like that?

Crush those dried herbs between your fingers before you toss them in. It wakes up the oils that have been sitting there forever. I did this with some old thyme last week, and it saved a soup. People act like dried herbs are trash, but they just need a little help. That rosemary jar probably had more life left than you thought. Just don't sniff it too hard unless you want a face full of dust.
